Quinoa Chickpea Salad

A filling and fresh healthy salad
Ingredients
- 200g quinoa
- 1 can of chickpeas
- 1 can of sweetcorn
- 1 bell pepper
- 1/2 cucumber
- 1 lemon, juice & zest
- 200g cherry tomatoes
- 200g feta
- 2 tsp capers
- a few spring onions
- bunch of parsley
- olive oil
- salt & pepper
Method
- add quinoa to a saucepan with 400ml of water, bring to the boil and simmer for 15-20 minutes until cooked
- drain and rinse the chickpeas and sweetcorn
- dice the pepper and cucumber
- zest and juice the lemon
- finely chop spring onions and parsley
- once the quinoa is cooked, combine everything in a large bowl
- crumble in the feta and sprinkle with capers
- drizzle with olive oil and season generously
