Quinoa Chickpea Salad

A filling and fresh healthy salad

  1. add quinoa to a saucepan with 400ml of water, bring to the boil and simmer for 15-20 minutes until cooked
  2. drain and rinse the chickpeas and sweetcorn
  3. dice the pepper and cucumber
  4. zest and juice the lemon
  5. finely chop spring onions and parsley
  6. once the quinoa is cooked, combine everything in a large bowl
  7. crumble in the feta and sprinkle with capers
  8. drizzle with olive oil and season generously
