Fajita Bowls

Delicous fajita flavours with rice, salsa, and guacamole
Ingredients
- 1 can of black beans
- 3 bell peppers, sliced
- 1 red onion, sliced
- 2 tsp paprika
- 1 tsp cumin
- ½ tsp chilli powder
- (optional) a few tomatoes or a spoonful of puree
Method
- heat a frying pan over a medium heat with a splash of oil
- fry the onions for a few minutes until they begin to brown
- add the peppers and fry until soft
- pour in the drained black beans (and tomatoes, if using)
- mix in the spices, season generously and remove from the heat
- serve with coriander lime rice, tomato salsa and guacamole
