Crispy Roast Potatoes

Perfect crispy potatoes
Ingredients
- 1kg floury potatoes (e.g. Maris Piper)
- 3 garlic cloves
- sprigs of fresh rosemary
- vegetable oil
Method
- add at least ½cm oil to roasting dish with rosemary sprigs and garlic gloves
- pre-heat oil in oven at 200
- meanwhile, peel & chop potatoes into even chunks
- in a large pan, parboil potatoes for maximum 7 minutes
- drain potatoes and return to pan
- shake with lid on to rough up edges
- add to hot oil and roast for 40 minutes
- drain oil and add salt before returning to oven for last 10 minutes, until crispy and golden
