Crispy Roast Potatoes

  1. add at least ½cm oil to roasting dish with rosemary sprigs and garlic gloves
  2. pre-heat oil in oven at 200
  3. meanwhile, peel & chop potatoes into even chunks
  4. in a large pan, parboil potatoes for maximum 7 minutes
  5. drain potatoes and return to pan
  6. shake with lid on to rough up edges
  7. add to hot oil and roast for 40 minutes
  8. drain oil and add salt before returning to oven for last 10 minutes, until crispy and golden
